The first head explosion in Dawn of the Dead. Surprised me so much, and caught me off guard, and from then on the movie is in full swing. I love watching people see Dawn of the Dead for the first time and seeing their reaction after that.
Dawn of the Dead- When the bikers invade the mall, Ken Foree turns the tables on them, and then it all goes to shit. Awesome and very powerful action and gore scenes throughout this part of the movie.
Day of the Dead (1985) - When Sarah dreams of the arms reaching through the walls to grab her. It's a hallucinatory, foreshadowing moment that manages to shock as well.

The little girl killing her mom with the trowel in Night of the Living Dead. I still think it's one of the strongest kill scenes to date. The angles, the weird music, really everything about it is just so unsettling.
Day of the Dead - When Bub tries to let Dr. Logan know he accidentally broke free of his chains only to find the doctor dead on the ground. Howard Sherman (or Sherman Howard as he seems to go by now) is completely covered in makeup and he still sells that scene so well that I nearly cry every time I see it.
"Do you wanna party?" rising from the grave montage from Return of the Living Dead. It's so energetic and fun and punches the movie into high gear for act 2.
Not the best zombie movie by any means, but my favorite scene in a zombie movie is in Nightmare City when the zombies get off the plane and start using their weapons on everyone. Never saw that done before.
My favorite scene in a zombie picture doesn't involve blood and guts but rather very fine acting by Duane Jones. It's in the original Night when Ben is regaling catatonic Barbara with his account of a diner overrun by ghouls. Jones is so good in this scene I can always imagine his story about as well as I remember actual scenes from the movie.
